Pancakes with cashew and carob toppings

Hey there, I usually have the same breakfast most mornings but when I’m wanting some variation to my usual breakfast here’s a delicious option.

Pancakes


Ingredients

1 cup oats blended

3 tbsp self raising flour

1 ripe banana

1 cup soya milk (use a plant milk alternative of your choice)

Method

Blended all ingredients together.

Use a spoon to pour batter into a heated pan (no oil) on a medium-high heat.




Carob sauce topping

Ingredients


1.5 Tbsp carob powder

Approx 57g raw cocoa butter (melted)

3 Tbsp maple syrup

1 Tbsp soya milk

Method


Whisk together until combined.


Cashew Topping


Ingredients

1/2 cup cashews

1/2 cup soya milk

1 Tbsp maple syrup

1 Tbsp lemon juice

Method

  1. Soak the cashews in hot water for at least 1/2 before blending.

  2. Blend all ingredients together.


To serve your pancakes, feel free to stack as many as you would like on top of one another. Then cover with as much cashew and carob sauce as you wish. I like to top mine with fruit like blueberries, strawberries or cherries and then enjoy!
