Cauliflower 'Wings' Two Ways

Hey there! Last week Tuesday I had the pleasure of having my friend Natalie, one of the sisters from @notreallythatvegansisters on Instagram show us how to make cauliflower wings two different ways. It was a lot of fun and I even had the opportunity to taste them too and they were amazing, so give them a go!

Ingredients
• 1 cauliflower head
• vegetable oil
• 1 tsp salt
• ½ tsp ground pepper
For the wet batter:
• 250ml or 8floz non-dairy milk
• 1 tbsp apple cider vinegar
• 5 or 6 tbsp hot sauce
• 2 tsp corn-starch
For the dry coating:
• 100g plain flour *
• 50g breadcrumbs *
• 1 tbsp salt
• 1 tbsp All purpose seasoning
• 1 tsp chilli powder
• 2 tsp garlic powder
• 1 tsp ground pepper
• 1 tsp smoked paprika
• 1 tsp Mixed spice
** (Alternatively you could use 150g of just plain flour or just breadcrumbs. Wholewheat plain flour also works well if you would like a healthier option).

For the wing sauce:
• 40g melted plant-based spread
• 2 tbsp BBQ sauce
• 1 tbsp Ketchup
• 1 tbsp Hot Sauce
(You don’t have to use this combination, you can have just BBQ wings or just hot wings. This combination is just my preference)
Method:
1. Preheat the oven to 200°c.
2. Cut the cauliflower into florets, bite size or bigger, totally up to you.
3. To make the batter, combine the non-dairy milk with the apple cider vinegar and hot sauce in a large bowl. Whisk in the cornstarch. To avoid lumps you can add a little bit of the milk mixture to the cornstarch to make a thin paste, then combining with the rest of the batter.
4. In another large bowl, combine the flour with the seasoning for the dry coating. If you do not want to use a lot of salt, you can add more all purpose seasoning and then sprinkle salt on the finished product.
For the southern fried cauliflower:
Put half of the cauliflower on a baking tray drizzled with vegetable oil and sprinkled with salt, and ground pepper. Bake for 25 to minutes until tender. Keep an eye on it so it doesn’t burn. Let cool down a little before battering.
I shallow fry the cauliflower, but you could deep fry them if you prefer to. Heat up the oil on a medium heat in a pan and prepare the florets.
Dip a baked floret in the wet batter, then cover it in the coating. Dip it back into the wet batter and then coat in the dry ingredients again. Then place the floret into the hot oil. * It should take a few minutes to become golden brown. If it is browning too quickly, you may need to turn down the heat.
We recommend frying a tester so that it’s seasoned to taste. If it’s too salty, add more flour. If it is bland, add more seasoning.
Batter the rest of the baked florets. Fry a few pieces at a time for 4 to 5 minutes until golden brown and crispy.
Remove carefully from the pan onto a baking sheet or large plate covered with paper towels to absorb excess oil.
Serve with the dip of your choice.
To reheat leftover fried cauliflower, place the pieces on a baking sheet and bake in a 200°c oven for 10 to 12 minutes.
* If you would prefer to air fry the cauliflower, bake at 200°c for about 10 minutes until golden.
For the BBQ wings:
Place a piece of greaseproof paper on a baking tray.
Using the other half cauliflower, dip a floret into the wet batter and then cover it it in the dry coating. Place this on the baking tray and repeat this process with the remaining florets.
Bake in the oven at 200°c for 25 minutes.
Melt the butter and add the sauces of your choice. We chose BBQ, Ketchup and Hot Sauce. There’s no right or wrong here, it’s all about personal preference.
Once the florets are baked and golden, coat in the BBQ hot sauce. You can use a brush, pour it over, or toss the florets in the bowl of sauce.
Bake in the oven for another 20 minutes. These can also be air fried to make them crispier.
Serve with a dip of your choice.
To reheat leftover fried cauliflower, place the pieces on a baking sheet and bake in a 200°C oven for 10 to 12 minutes.
