Vegan Mac and 'cheese' with veggie crumbles

Hey there! welcome back to the blog. Last week I had a guest with me on Instagram Live- Sabrina (@sabrieatsvegan) who shared how to make a plant-based recipe for mac'n'cheese and veggie crumbles. You can watch the replay here if you missed! Otherwise, here is the written recipe courtesy of Sabrina if you'd like to give it a go. Mac 'n' 'Cheese


Ingredients:

Macaroni pasta

1/3 cup of raw cashews

14 oz can lite coconut milk

1/4 cup of nutritional yeast

2 1/4 tsp of salt

2 tsp onion powder

4 1/2 Tbsp of cornstarch

1 tsp of garlic powder

1/2 tsp of turmeric

1/2 tsp of paprika

1/2 tsp of Cajun seasoning

1 Tbsp Tufutti cream cheese (alternatively feel free to experiment with a UK vegan cream cheese of your choice)

2 thick slices of vegan cheddar cheese

(Violife cheddar cheese or Daiya cheddar cheese work best)

TB of parmesan cheese (vegan)


Instructions:

1. Place all ingredients in blender, and blend until smooth and creamy.

Place the cheese sauce in pot on medium heat. Stir for ten minutes and let it thicken.

2. Cook macaroni according to the directions on the package. When the macaroni is done cooking, drain well and return to pan. Pour cheese sauce over macaroni and mix the sauce into the pasta.


Veggie Crumbles


Ingredients: 1/2 bag of morning star veggie crumbles (for those in the UK, you can use a plant-based mince of your choice) 1 onion diced 4 small peppers diced 3 garlic diced 1 tsp garlic powder 1 tsp of onion powder 1/2 tsp Cajun seasoning Pinch of cayenne

Instructions: 1. In a frying pan sauté diced onion, peppers, and garlic. Let the onions become translucent. 2. When onions are translucent add veggie crumbles to the pan with dry seasoning.

3. Stir ingredients together and let the veggie meat cook. (Veggie meat normally comes frozen so it has to thaw out while cooking in pan) when veggie meat is cooked place crumbles on top of the Mac and cheese.

4. You can add your own toppings as well. I like green diced onions, Parmesan cheese, and fried onion pieces.

5. Serve and enjoy!
