'Cheese' Pastries and Ketchup

Hey there, welcome back to the blog. A couple of weeks back, Tamara Muroiwa shared her favourite recipes for vegan ‘cheese’ pastries and homemade ketchup. She shared that the ‘cheese’ recipe came from the book- ‘The Ultimate Uncheese Cookbook by Joe Stepaniak’ (with a couple of alterations). Be sure to check out the book and purchase a copy. 'Cheese' Pastries
Ingredients
1 can drained chickpeas
3 Tbsp nutritional yeast flakes
1 ½ tbsp Olive oil (or other vegetable oil)
2 tbsp tahini
2 tbsp lemon juice
1 ½ tbsp Miso paste
1 tsp onion powder
3 ¼ tsp salt
½ tsp paprika
¼ tsp garlic powder
Dash of cayenne pepper
Jus Roll puff pastry
1. Blend the above in a blender until smooth, a few chunks in the mixture is fine.
2. Put the ‘cheese’ to the side.
3. Open out your pastry, making sure to keep it cool and not handle it too much to cause the butter to melt in the pastry.
4. Use a cookie cutter or small bowl to cut around to get small circular shapes in the pastry.
5. Add a teaspoon of the ‘cheese’ mixture in the middle. Wet the outside of rim of the circle. Fold over one side of the pastry to the other and use a fork to crimp the sides of the pastry together.
6. Pierce the top of the pastry with the fork.
7. Continue the process and place all the pastries on your baking tray, leaving some space in between each one.
8. To help brown the pastries rub the top with a plant-based milk.
9. Bake in the oven for about 15-20 minutes (or at least browned to your desire) at 180 degrees Celsius
Ketchup
This recipe Tamara shared from the book- “Of These Ye May Freely Eat” by JoAnn Rachor cookbook.
Ingredients
6 oz can Small tin tomato puree
2/3 cup water (or equal amount of water to the amount of tomato puree you use)
1 tbsp Sweetener i.e. honey or maple syrup
½ tsp Salt
Method
Whisk the ingredients together and enjoy!
