Pasta in tomato sauce and garlic bread

It's Tuesday! Tonight, I was joined by Craig Gooden who shared a simple recipe on Instagram Live which you can tell is just bursting with flavour. The recipe serves 4-6 people


The Sauce


Ingredients

3 cans tinned plum tomatoes

3 onions

3/4 of a 660g jar of black olives

1 bulb of garlic

3-4 tablespoons of dried basil

Olive oil

Sea Salt or pink Himalayan salt


Method

  1. Pour olive oil in cooking pot, heat and add finely chopped onions and garlic (leave one clove of garlic for garlic bread).

  2. Cover pot with lid and stir occasionally.

  3. Cool till onions and garlic are lightly browned.

  4. Either blend in food processor or with hands squash/crush tomatoes and olives till pieces are small. Add to pot.

  5. Cook for ten minutes before adding anything else.

  6. Add basil to the sauce and stir into sauce. Cook for another 10-20 minutes, stirring occasionally.

Pasta


  1. Boil pasta till al-dente

  2. Drain water

  3. Add sauce to the pasta and stir in lightly so pasta is mixed in well with sauce. You may not need to use all the sauce.

  4. Place on dishes

Garlic Bread


  1. Toast a slice of sourdough bread

  2. Take clove of garlic and rub onto the toast gently. (You don’t have to use the whole clove).

  3. Add a little olive oil to the slice and sprinkle a pinch of salt.
