Scrambled Tofu!

This recipe is said to be an alternative to scrambled eggs. It's pretty quick and easy and you can adapt it based on what you have available in the cupboards/fridge and season as you like! The best thing is that if you're cooking for one, this recipe can give you 2 servings, depending on how much you eat at a time. This recipe yields 2 servings

Ingredients
1 teaspoon nutritional yeast (can be bought from health food stores or large supermarkets)
1 1/2 tsp turmeric
1 tsp onion powder
1 tsp ground cumin
1 tsp paprika
Pinch sea salt
1 tbsp vegetable oil
½ onion, finely diced
2 cloves garlic, minced
½ orange pepper ½ red pepper (or whichever colour of peppers you have available)
1/2 package firm tofu, very well drained (you can by this in major supermarkets, have a look for the Cauldron range)
Instructions
Pour the oil in a frying pan and place it over medium heat. Once hot, add onion and garlic, and sauté until fragrant, about 2 minutes.
Add the spices (excluding salt) and mix together until combined with the onion and garlic.
Then add the sweet peppers and sauté until the peppers are soft.
Next, open your package of firm tofu, squeeze out all extra water using paper towels/ tea towels.
Crumble tofu into the pan, (or you can do this separately then add to the pan) breaking it up with a wooden spoon. Stir and combine until the tofu is fully coated in spices and is a nice golden colour. Cook for 2 minutes or until tofu is hot throughout. Once you are happy with the browning of the tofu, sprinkle the nutritional yeast over the tofu and mix in. Don’t heat it too much at this stage as you will damage the nutritional yeast.
Add salt to taste (being careful not to add too much), serve with your choice of sides and enjoy!
