Vegan 'Salmon'

One of the things I love to do, is trying new plant based recipes! I saw this recipe a while back from Henry and Ian from Bosh on Instagram. They have some great vegan recipe and this one was inspired by their recipe in their cookbook ‘Healthy vegan’. I've shared this photo with meat eaters and vegans alike and everyone is astonished by the resemblance to salmon! Whilst this may not exactly replace the flavour of salmon it comes very close for a plant based dish and was a very tasty meal. I just made a few tweaks to the recipe, and here it is.. hope you enjoy!

Ingredients
Serves 2
250g firm tofu
30ml beetroot juice
1 nori sheet (seaweed)
1 tbsp capers + 1 tbsp capers brine
2 sprigs spring onion
2 tsp dried dill
1 lemon
1 tbsp olive oil
10g fresh dill
1tsp fish seasoning (I use tropical sun)
1 tsp Salt
1. Open up the pack of tofu and cut in half. Slice that length ways to get two ‘slabs' of tofu.

2. In a baking dish place the tofu and cover in the beetroot juice.
3. Marinate for about 30 minutes whilst you prep the other ingredients.
4. In another baking dish, place cut the seaweed into squares to fit the size of the tofu and place the seaweed into the dish and then each piece of tofu on top of a piece of seaweed (when cooked this resembles the ‘skin’ of the salmon.
5. Squeeze the juice of ½ lemon, pour the caper brine, sprinkle on the spring onions and capers. Place slices of lemon on each piece of tofu as well as the sprigs of fresh dill.
6. Cover this dish with foil and place in the oven for 20 minutes.
7. Once done, uncover the dish, sprinkle the salt, fish seasoning, and olive oil over the tofu.
8. Place back in the oven for 10 minutes.
9. Once done, sprinkle with some dried dill and serve with your sides of choice!
*Tofu is a good source of protein; I would recommend serving with some vegetables and a starchy carbohydrate of your choice for a balanced meal.
