Ackee and Jackfruit

Hey there! If you have been following @chazdelightnutrition, you know that I was born in Jamaica and so as I now follow a plant-based I take joy in learning how to make classic Jamaican dishes plant-based. So here's one that my friend Craig Gooden introduced me to on one of my Instagram Live sessions last year. If you missed out and want to watch the replay, you can check it out here. Ingredients
Tin of ackee
Tin of green jackfruit
Sea salt
1-2 tsp fish seasoning (Tropical Sun)
2 red sweet peppers
1 green sweet pepper
3 onions
Tomatoes
1/2 - 1 tsp dried thyme (or fresh)
Vegetable oil
Method
1. Drain and separate jackfruit, add sea salt (to taste) and fish seasoning to the jackfruit.
2. Roast jackfruit in oven until golden but still tender.
3. Chop tomatoes, onions and peppers.
4. Sauté onions with thyme in oil (the less you can use the better).
5. Add tomatoes and simmer until soft.
6. Add peppers and simmer until soft (depending on how soft you like your peppers).
7. Add the jackfruit and simmer for about 10-15 minutes until all is combined (make sure that all the liquid doesn't dry out)
8. Add salt to taste (if needed).
9. Add ackee at the end and combine- be careful not to press the ackee to a mush.
Serve with boiled or friend dumplings , green banana, plantain, breadfruit, yam for a delicious Jamaican breakfast or dinner.
