Greek Salad Pizza

Hey there! I am back with a new series of IG live cooking with various guests. Last week Tuesday I had Sarah (@eaten2.0) show us how to make a super quick and easy nutritious meal, perfect as a lunch time meal. You can watch the recording of the live session here. Greek Salad Pizza


Items

1. Manouche (or Pita)

2. Hummus (homemade or storebought)

3. Greek Salad


1. Gather all of your ingredients

2. Spread the hummus onto your flatbread

3. Add your Greek salad

3. Serve and enjoy!




Garlic Manouche: Lebanese Flatbread


Here’s the recipe if you want to make it from scratch. Otherwise you can use store bought pitta breads for a quicker alternative.

Dough

3 1/4 cups whole wheat pastry flour

2 Tbsp olive oil

1/2 cup warm water

1 Tbsp honey

2 tsp active dry yeast

2 tsp salt

1 Tbsp minced garlic



Za'atar spread

1/4 Za'atar

1/3 c olive oil

1 tbsp minced garlic


1. Mix all the ingredients together and knead for about 4-5 minutes until the dough is smooth and elastic

2. Cover and let rise in a warm area for about an hour or until doubled in size

3. Preheat oven to 500 degrees (or highest setting) along with a pizza stone or an upside-down baking sheet

4. Divide dough into 6 pieces and form into balls, cover, and let rest for 15 minutes

5. While your dough is resting, make your za'atar oil (for brushing onto the flatbread after it bakes)

6. Flatten each piece of dough (flour generously so it doesn't stick), and transfer each one onto the hot pizza stone (or baking sheet) for about 4 minutes, or until puffed up and golden brown.

7. Transfer a baking sheet and cover with a clean towel to keep warm until all al finished.




Greek Salad

(2 servings)


1-2 chopped tomatoes

1 chopped cucumber

1/3 sliced red onion (thinly)

1/4 cup kalmata olives

3 ounces violife feta cheese (plant-based) - Feel free to use a brand of your liking!)

1/4-1/2 tsp salt (or to taste)

2 tsp za'atar

3 tbsp lemon juice


1. In a bowl, mix all of the ingredients until well incorporated

2. Serve and enjoy.
