Laura and Natalie's Vegan Cookies

Hey! Thanks for stopping by this blog. If you’ve been following these blog posts or you’re a follower on Instagram, you will know that I have been doing a series of Instagram LIVE programmes. At the beginning of November, my friends Laura and Natalie shared their recipe for vegan cookies! You can watch the replay of our session here.

Ingredients
125g Vegan butter/margarine
100g light brown sugar
125g caster sugar
6 tbsp aquafaba (chickpea water)
1 tsp vanilla extract
225g self-raising flour
½ tsp salt
Crushed oreo/raisins/chocolate chips/carob ‘chocolate’
Method
1. Cream the sugar and the chickpea water together.
2. Add the vanilla extract and mix together
3. Add the margarine and mixed together until creamy and combined
4. Add the flour in gradually and mix together until combined
5. Spoon a small amount evenly spaced out unto a greased baking tray. Be sure to leave space in between each cookie as they will spread in the oven.
6. At this point, add the oreos/chocolate chips/raisins/carob ‘chocolate’ at this point.
7. Bake at 180 degrees Celsius for 15 minutes
*If you’re seeking to reduce your sugar, I’ve tried cutting it down by just using dark brown sugar and it works too 😊
